Lebanese Mujadara

Ingredients

  • Zacca Traditional Hummus
  • 1/4 cup olive oil
  • 1 yellow onion, thinly sliced
  • 2 1/4 cup water
  • 1 cup brown lentils
  • 1/2 tsp salt
  • 1/2 cup white rice
  • 1 tsp cumin

 Directions

  1. Heat olive oil in a large pan over high heat. Add onions and cook, stirring constantly, until the onions are deeply browned and crispy. Transfer to a plate and set aside,
  2. Add lentils to a large pot, add water and stir to combine. Bring to a boil, then reduce heat to low and cover. Cook 15 minutes.
  3. Add rice and salt to lentil pot. Stir once, then cover again and cook in disturbed for 15 minutes.
  4. Remove from heat. Rest uncovered for 5 minutes longer. Add cumin and fluff rice and lentils with fork.
  5. Add crispy onions on top and serve with hummus. We also added homemade falafel using Snacktivist falafel mix. Enjoy!
