This comforting dish combines spice-roasted cauliflower with our farm-fresh chickpea hummus for a Lebanese-inspired bowl that's both satisfying and nutritious. The aromatic curry spices and crispy cauliflower create a perfect complement to the smooth texture of our hummus, while traditional Middle Eastern dukkha adds a delightful crunch. A thoughtful fusion of global flavors that respects our Lebanese heritage while embracing warming spices from around the world.

Ingredients

  • 1 head cauliflower, cut into florets
  • 2 tbsp avocado oil
  • 1 tsp curry powder
  • Pinch salt and pepper
  • Zacca Traditional Hummus
  • Dukkha, to garnish
  • Parsley, to garnish

Directions

  1. Preheat the oven to 450 degrees Fahrenheit.
  2. In a large bowl, toss the cauliflower with the oil, curry powder, and salt and pepper. Pour onto a large baking sheet and spread evenly.
  3. Roast the cauliflower for about 15-20 minutes until tender. Broil for 2-3 minutes if desired for extra crisp.
  4. Spread desired amount of the hummus onto your serving platter and top with the roasted curry cauliflower. Garnish with Dukkha and parsley and enjoy!
