Healthy Mediterranean Turkey Burgers

These Mediterranean Turkey Burgers are juicy, flavorful, and loaded with fresh vegetables and herbs. Spinach, zucchini, feta, and parsley add vibrant taste and texture to lean ground turkey, while lemon zest and oregano bring a bright, zesty kick. Served on toasted buns with a generous layer of creamy Zacca Traditional Hummus, these burgers are a wholesome and delicious twist on a classic favorite. Ingredients:

  • 1 pound ground turkey
  • ½ cup fresh spinach leaves, finely chopped
  • ½ cup shredded zucchini, excess moisture squeezed out
  • ½ cup crumbled feta cheese
  • ¼ cup red onion, minced
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon lemon zest
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes
  • Olive oil or avocado oil, for grilling

For serving:

  • 4 hamburger buns, toasted
  • Zacca Traditional Hummus
  • Tomato slices
  • Red onion slices

Directions:

  1. In a large bowl, add the ground turkey, spinach, zucchini, feta, red onion, parsley, lemon zest, garlic powder, oregano, salt, pepper, and crushed red pepper flakes. Mix with your hands to combine.

  2. Form the mixture into four ½-inch-thick patties.

  3. Preheat the grill (or grill pan) to medium heat and brush with oil. Grill the burgers until cooked through, about 5 to 6 minutes per side. A turkey burger is fully cooked when the center of the patty reaches an internal temperature of 165°F.

  4. Place the burgers on the toasted buns and top with hummus, tomato, and red onion. Serve immediately.
