Ingredients
- 5 hard-boiled eggs
- ¼ cup Zacca Traditional Hummus
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- Pinch salt and pepper, to taste
- Paprika, to top
- Chives, to top
Directions
- Halve the eggs and place the cooked yolks in a bowl.
- To the bowl, add the hummus, lemon juice, Dijon, and a pinch of salt and pepper. Mash the egg yolks while mixing everything together until well combined and mostly smooth. Taste and add more salt and pepper if needed.
- Spoon the hummus mixture back into the halved eggs, filling the space where the yolk used to be.
- Chill for 30 minutes, then top with paprika and chopped chives before serving.
