Hummus Sweet Potato Bites
Ingredients
- 1 medium sweet potato, scrubbed
- 2 tbsp extra virgin olive oil, divided
- Pinch salt and pepper
- Zacca Spicy Mediterranean or Roasted Red Pepper Hummus
- ½ small cucumber, finely diced
- ¼ cup finely diced red onion
- ½ red bell pepper, finely diced
- 1 tbsp chopped mint
- ½ lemon, juice
- Crumbled feta cheese
Directions
- Preheat the oven to 425 degrees fahrenheit.
- Slice the sweet potato into rounds and toss with 1 tbsp olive oil and a pinch of salt and pepper. Spread on a baking sheet and roast in the oven for about 15 minutes or until fork tender and cooked through but still firm.
- Let cool slightly, then spread some of the hummus on each sweet potato bite.
- In a bowl, mix together the diced cucumber, onion, bell pepper, mint, lemon juice, remaining 1 tbsp olive oil, and a pinch of salt and pepper.
- Spoon the veggie mixture on top of the sweet potato bites. Top with some crumbled feta and enjoy!
