Lebanese Mujadara
Ingredients
- Zacca Traditional Hummus
- 1/4 cup olive oil
- 1 yellow onion, thinly sliced
- 2 1/4 cup water
- 1 cup brown lentils
- 1/2 tsp salt
- 1/2 cup white rice
- 1 tsp cumin
Directions
- Heat olive oil in a large pan over high heat. Add onions and cook, stirring constantly, until the onions are deeply browned and crispy. Transfer to a plate and set aside,
- Add lentils to a large pot, add water and stir to combine. Bring to a boil, then reduce heat to low and cover. Cook 15 minutes.
- Add rice and salt to lentil pot. Stir once, then cover again and cook in disturbed for 15 minutes.
- Remove from heat. Rest uncovered for 5 minutes longer. Add cumin and fluff rice and lentils with fork.
- Add crispy onions on top and serve with hummus. We also added homemade falafel using Snacktivist falafel mix. Enjoy!
