Mediterranean Chicken Skewers with Hummus

Mediterranean magic in a bowl ✨ There’s something so satisfying about layering fresh, vibrant ingredients and watching it all come together. Starting with crisp greens, colorful peppers, and juicy tomatoes, then adding our creamy Poblano Pepper Hummus as the perfect base, warm @devancofoods pita, and finishing with those perfectly grilled chicken skewers – this is what clean eating dreams are made of!

Ingredients

For the chicken skewers:

  • 1 ½ lb boneless, skinless chicken thighs (or breasts), cut into 1–1.5 inch pieces
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp ground coriander
  • ½ tsp dried oregano
  • salt & pepper
  • Wooden or metal skewers

For the salad:

  • 2 cups chopped romaine or mixed greens
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, sliced
  • ¼ cup thinly sliced red onion
  • ⅓ cup kalamata olives, pitted and halved
  • ¼ cup crumbled feta (optional)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar or lemon juice
  • salt & pepper

1 container Zacca Poblano Pepper Hummus

Optional for serving:
Warm pita or flatbread
Tzatziki

Directions

  1. If using wooden skewers, soak them in water for at least 20 minutes.
  2. In a large bowl, combine olive oil, garlic, lemon juice, and spices. Add a pinch of salt and pepper and whisk to combine. Add the chicken and toss until evenly coated. Cover and marinate in the fridge for at least 30 minutes, or up to a few hours.
  3. While the chicken marinates, prepare the salad. In a large bowl, combine greens, cherry tomatoes, cucumber, red onion, and kalamata olives. Drizzle with olive oil and vinegar (or lemon juice), season with salt and pepper, and toss to combine. Top with feta if using.
  4. Thread the marinated chicken onto skewers, leaving a little space between each piece.
  5. Preheat a grill or grill pan to medium-high heat and lightly oil the grates. Grill the skewers for 10–12 minutes, turning occasionally, until fully cooked through and lightly charred.
  6. Spread a generous layer of Zacca Traditional Hummus onto a serving plate. Arrange the warm skewers on top or alongside the hummus.
  7. Serve with the fresh salad, warm pita, and a side of tzatziki. Finish with a squeeze of lemon, a drizzle of olive oil, and fresh herbs if desired.
