Mediterranean Grilled Salmon with Sumac, Lemon, and Fresh Herbs

This Mediterranean Grilled Salmon with Sumac and Herbs is fresh, tangy, and full of flavor. The salmon is marinated in olive oil, lemon, honey, parsley, dill, and sumac, then grilled until tender and flaky. Served over a bed of Zacca Parsley Cilantro Hummus, it’s a protein-packed, vibrant dish that pairs perfectly with pita, rice, or fresh veggies.

Ingredients:

  • 1 ½ lbs skinless salmon
  • ¼ cup olive oil
  • Juice from ½ a lemon (about 2 tbsp)
  • ¼ cup fresh parsley, chopped
  • 1 tbsp dill, chopped
  • 1 tbsp honey
  • 1 tbsp sumac
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper

Directions:

  1. Preheat over to 425. Cut the salmon into 1" cubes and add it to a bowl with the olive oil, lemon juice, spices, honey, parsley and dill. Toss together to combine. 
  2. Transfer the salmon to a sheet-pan. Bake for 10-12 minutes, then set under the broiler for 2 minutes to crisp.
  3. To serve, spread a generous layer of Zacca Parsley Cilantro Hummus on each plate, then place the grilled salmon on top. Garnish with extra fresh herbs and lemon wedges if desired.
