Ingredients (serves 2-4)
- 2 cups of corn
- 1/3 cup of roasted poblano pepper
- 1/4 cup of finely chopped cilantro
- 2 limes
- 1 tsp of taco seasoning
- 2/3 cup of plain Greek yogurt
- 1/3 cup of Zacca Hummus in Poblano Pepper
- 2 tbsp of cotija cheese
- 1/2 tbsp of red pepper flakes
Directions
- Add the corn in a large bowl, wash the cilantro and chop it.
- Add in the roasted poblano pepper, squeeze the limes, taco seasoning, Greek yogurt and hummus. Mix well.
- Serve this on a plate, top with cilantro and cotija cheese.
