Ingredients

  • 2 lb. whole carrots, sliced
  • 1-2 tbsp olive oil
  • 1 tsp curry powder
  • Pinch salt & pepper
  • 1 tbsp honey
  • Zacca Cilantro Parsley Hummus
  • Chopped pistachios

Directions

  1. Preheat oven to 425 degrees
  2. Toss carrots with olive oil, curry powder, and salt & pepper
  3. Transfer to the oven and roast until browned and tender as desired, about 15-20 minutes
  4. Remove from oven and toss carrots with honey
  5. Spoon hummus on a serving platter and plate carrots on top of the hummus
  6. Sprinkle with chopped pistachios and serve!
