Mediterranean Stuffed Zucchini Boats
Ingredients
- 3 zucchini sliced and seeds removed
- 1/2 cup quinoa, cooked per package directions
- 1/2 tsp garlic powder
- ½ tsp dried basil
- ¼ tsp oregano
- 1 cup grape tomatoes, sliced
- ¼ cup red onion, diced
- ½ cup crumbled feta cheese
Directions
- Preheat oven to 375 degrees Fahrenheit.
- Prepare zucchini and place face up in a baking dish.
- Combine spices, quinoa, and Zacca Roasted Red Pepper Hummus.
- Fill zucchini with quinoa/hummus mixture. Top with tomatoes, red onions, and feta. Bake for 30-35 minutes or until zucchini is tender. Enjoy!
