Mediterranean Stuffed Zucchini Boats

Ingredients

  • 1 cup Zacca Roasted Red Pepper Hummus
    • 3 zucchini sliced and seeds removed
    • 1/2 cup quinoa, cooked per package directions
    • 1/2 tsp garlic powder
    • ½ tsp dried basil
    • ¼ tsp oregano
    • 1 cup grape tomatoes, sliced
    • ¼ cup red onion, diced
    • ½ cup crumbled feta cheese

     Directions

    1. Preheat oven to 375 degrees Fahrenheit.
    2. Prepare zucchini and place face up in a baking dish. 
    3. Combine spices, quinoa, and Zacca Roasted Red Pepper Hummus.
    4. Fill zucchini with quinoa/hummus mixture. Top with tomatoes, red onions, and feta. Bake for 30-35 minutes or until zucchini is tender. Enjoy!
