Whole Roasted Curried Carrots
Ingredients
- 2 lb whole carrots, sliced in half lengthwise
- 1-2 tbsp extra virgin olive oil
- 1 tsp curry powder
- Generous pinch salt and pepper
- 1 tbsp honey
- Zacca Cilantro Parsley Hummus
- Chopped pistachios
Directions
- Preheat the oven to 425 degrees fahrenheit.
- Toss the carrots with the olive oil, curry powder, and a generous pinch of salt and pepper. Transfer to the oven and roast until browned and tender as desired, about 15-20 minutes.
- Remove from the oven and toss the carrots with the honey.
- Spoon the hummus on a serving platter and plate the carrots on top of the hummus. Sprinkle with the chopped pistachios and serve!
