Whole Roasted Curried Carrots 

Ingredients

  • 2 lb whole carrots, sliced in half lengthwise
  • 1-2 tbsp extra virgin olive oil
  • 1 tsp curry powder
  • Generous pinch salt and pepper
  • 1 tbsp honey
  • Zacca Cilantro Parsley Hummus
  • Chopped pistachios

Directions

  1. Preheat the oven to 425 degrees fahrenheit.
  2. Toss the carrots with the olive oil, curry powder, and a generous pinch of salt and pepper. Transfer to the oven and roast until browned and tender as desired, about 15-20 minutes.
  3. Remove from the oven and toss the carrots with the honey.
  4. Spoon the hummus on a serving platter and plate the carrots on top of the hummus. Sprinkle with the chopped pistachios and serve!
